Lemon Rice

This rice reminds me of what you’ll find at a Greek or Lebanese restaurant.
The lemon adds such freshness!


2 tablespoons butter
1 tablespoon oil
1 tablespoon garlic – minced
1 tablespoon ginger root – grated
1 cup rice
2 cups chicken broth
1 tablespoon lemon zest
3 tablespoons fresh lemon juice
green onion for garnish


  1. In a saucepan, combine butter, oil, garlic, ginger and rice. Stir to coat rice, then add broth, lemon zest and juice.
  2. Bring to a boil, cover and reduce heat to low.
  3. Uncover after 15 minutes, use a fork to fluff rice. Enjoy!

*When squeezing lemons, be sure to pick out the seeds but keep the bits of fruit that fall in, they’ll add more flavor!!
