Chicken N’ Rice

This recipe reminds me of my childhood dinners! In retrospect, it seems as if my mother made this simple dinner about once a week, probably because it’s ‘lick your plate’ good!


1 pound boneless skinless chicken breast
1 tablespoon salt & pepper – each
2 teaspoons paprika
6 tablespoons butter
1 cup onion – diced
1 cup mushrooms – diced
1 cup white rice
2 cups chicken broth
2 tablespoons soy sauce
1 tablespoon garlic – minced
green onion for garnish


  1. Heat oven to 375F.
  2. Cut chicken into strips and toss in salt, pepper and paprika. Melt 2 tablespoons of butter in a skillet and quickly brown chicken on both sides, then place in a single layer in a covered casserole dish. Set aside.
  3. In a large skillet, combine remaining butter and chopped onion and mushrooms. Cook, stirring often, until onions are soft.
  4. Top chicken with uncooked rice, then pour onion/mushroom mixture atop rice. Lastly, add broth, soy and garlic.
  5. Cover and cook 45 minutes. Garnish with or stir-in freshly chopped green onion! Enjoy!
