Personal Potato Quiches

The wife and I enjoyed this tasty treat for breakfast this morning! It was the perfect solution to our sleep-in Saturday hunger!

Ingredients

2 tablespoons butter – softened
1 large russet potato – peeled and cubed
1 teaspoon salt
1 broccoli floret
1 green onion – chopped
4 large eggs – beaten
1/4 cup grated cheese – half parmesan, half cheddar

Directions

  1. Heat oven to 400F. Generously butter a 6-well muffin pan.
  2. Boil potatoes and broccoli. After 5 minutes, remove broccoli; cool and chop. Allow potatoes to continue cooking until fork tender. Drain, season with salt and cool.
  3. Combine potatoes, broccoli, green onions, beaten eggs and cheese. Pour mixture evenly among 6 muffin wells.
  4. Cook 20 minutes. Allow a few moments for cooling, then run a knife around the edges of each quiche to release from pan. Enjoy!
