Summer Strawberry Cake

This season, strawberries are extra delicious–so sweet and tart–which is why I decided to make a strawberry cake from scratch, using fresh strawberries as a natural flavoring! So often people use box cake mix and strawberry gelatin to create a cake such as this; however, homemade is always the best! Always! For starters, cook the strawberries and mix puree into the cake batter to add a subtle berry sweetness. Also, the tartness of the fresh berry slices used for garnish add an extra punch of flavor and beauty! Speaking of beauty, I thought it would be appropriate to dedicate this beautiful cake to my beautiful mother. Happy Birthday Mom!!  This Summer Strawberry Cake is dedicated to you! Strawberry Puree

2 1/2 cups strawberries – sliced
2 tablespoons sugar
1/2 cup water

Strawberry Cake 

1/4 cup heavy cream – room temp
1 cup strawberry puree
6 egg whites – room temp
1 tablespoon vanilla
2 1/4 cups cake flour
1 3/4 cups sugar
4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter, cubed – softened
1 tablespoon pink gel food coloring (optional)
fresh sliced strawberries for garnish

Buttercream Frosting      OR     Cream Cheese Frosting

1 cup butter – softened                       8 oz. cream cheese
6 cups confectioner’s sugar                1/4 cup butter – softened
1 teaspoon vanilla                                 1 tablespoon vanilla
4 tablespoons milk                               3 1/2 cups confectioner’s sugar
dash of salt


  1. Start with the puree. Combine strawberries and sugar, let sit for about an hour. Then toss in a small saucepot, add water and simmer on medium-low until mixture has reduced by half. Press strawberry mixture through a fine sieve and cool, set aside.
  2. Heat oven to 350F. Butter and flour two 8″ round cake pans. In a medium bowl combine egg whites, vanilla, strawberry puree and cream.
  3. Using a stand mixer, combine flour, sugar, baking powder and salt. Add butter and mix until mixture resembles moist crumbs. Slowing incorporate wet ingredients and mix on medium for one minute. Add gel coloring and mix well.  Pour evenly among prepared cake pans.
  4. Bake 25 minutes or until a toothpick inserted in the middle of cake comes out clean.
  5. Decorate cooled cake with frosting of your choice and garnish with slices of fresh strawberries. Enjoy!
