Puff Pancake

 

I’m BACK!!!! I apologize for my departure but I promise to add recipes more often…please, please forgive me! About this breakfast:  every time I make a puff pancake I am proud of myself. This breakfast pancake looks impressive and difficult to make but the recipe is super simple. My mother-in-law, who introduced me to this recipe, usually serves her puff pancake with macerated strawberries. The strawberries and their juices make a sweet syrup for the pancake to absorb…bomb breakfast if you ask me!

Ingredients

2 tablespoons unsalted butter
2 eggs
1/2 cup all-purpose flour
1/2 cup milk
Dash of salt

Instructions
1. Heat oven to 400. Melt butter in a 9″ pie pan, brushing bottom and sides of pie pan.
2. In a mixing bowl, beat eggs slightly. Add flour, milk and salt. Do not over mix.
3. Pour into pie pan and bake 25-30 minutes or until puffy and golden brown.
4. Dust with powdered sugar and enjoy with fresh fruit!
