Peach Cobbler

Summer is quickly approaching and I thought it appropriate to share my recipe for easy peach cobbler. I also enjoy cobblers with a biscuit topping or a crumbly crisp topping; however, those require a little more work! Perhaps another peach cobbler recipe is necessary before summer’s end? We shall see!

1/4 cup butter – melted
1 cup flour
1 3/4 cup sugar – divided
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup milk
5 peaches – pitted and sliced
1 teaspoon cornstarch
the juice of one lemon

  1. Heat oven to 400F. Pour butter in the bottom of an 8×8 baking dish.
  2. Combine flour, 1 cup sugar, baking powder, salt, cinnamon and nutmeg. Gradually stir in milk, don’t over mix. Without stirring together, pour batter atop butter.
  3. In a saucepan, combine peaches, 3/4 cup sugar, cornstarch and lemon juice. Bring to a boil and pour evenly atop batter.
  4. Bake 40 minutes. Enjoy!
