Crumb Cake

This breakfast cake is great with a cup of coffee or hot tea in the morning! Sweet and crunchy crumbles atop a fluffy vanilla cake, each bite is better than the one before!



1/2 cup cake flour
1/2 cup unbleached flour
1 tablespoon baking powder
1/4 cup butter – softened
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
1 tablespoon ground cinnamon
1/3 cup whole milk

Crumb Topping

1/4 cup butter – softened
1/2 cup brown sugar
1/4 cup sugar
1 tablespoon ground cinnamon
1/4 teaspoon ground cloves
1/4 cup unbleached flour


  1. Heat oven to 375F. Butter and flour a loaf pan, set aside.
  2. Sift together cake flour, unbleached flour and baking powder. Set aside.
  3. In a large mixing bowl, cream together butter and sugar. Beat in eggs, vanilla and cinnamon.
  4. Gradually beat in flour mixture and milk. Pour batter into prepared loaf pan.
  5. In another bowl, combine all ingredients needed for crumb topping. Crumble mixture atop cake batter.
  6. Bake 35 minutes. Cool at least 30 minutes. Enjoy!
