Chicken and Dumplings

It’s been forever since I enjoyed a nice bowl of chicken and dumplings. If fact, my wife has been begging me to get in the kitchen and make her a large pot of yumminess for quite a while now! Together we devoured this delicious southern meal and had plenty leftover! I hope you enjoy this tasty recipe!

Ingredients

1 pound chicken
1 onion – chopped
1 carrot – chopped
3 cups chicken broth
2 cups water
1 can condensed cream of chicken soup
1 1/2 cups flour
1/2 cup cold water
salt and pepper to taste

Directions

  1. Heat a large saucepot over medium-high heat and add seasoned chicken, onion and carrot. Stir veggies and turn chicken once.
  2. Add broth and water and bring to a boil. Reduce heat to medium and cover. Simmer for about 40 minutes or until chicken is cooked.  Remove chicken from the pot and set aside to cool. Once cooled enough to handle, remove skin and shred chicken. Meanwhile, assemble dumplings.
  3. In a mixing bowl, sift flour and gradually stir in cold water. Season with salt and pepper and create a large dough ball. Allow dough a few minutes to rest.
  4. Bring broth and veggie mixture to a boil and stir in condensed soup. Once soup is well incorporated, drop rounded tablespoons of dough into broth. The dumplings will sink to the bottom and then float to the top once they’re done. Gently roll dumplings in broth to insure doneness. Remove all dumpling and cover until ready to serve.
  5. Return shredded chicken to the saucepot and simmer. When you’re ready to serve, add dumplings and ladle chicken and broth into soup bowls. Enjoy!
