Barbecue Chicken Panini

I love hot sandwiches! I’ll take a hoagie, a french dip, a Philly cheesesteak or a Panini any day! This recipe for barbecue chicken requires only four ingredients and can be served as-is or on a yummy sandwich!

Ingredients

4 skinless chicken thighs
1/4 cup chopped onion
1/2 cup barbecue sauce
1/2 cup water
4 loaves pita bread

Directions

  1. In a large saucepan over medium-low heat, combine chicken thighs, onion, barbecue sauce and water. Cover and simmer 30-40 minutes or until liquid had thicken, stirring often.
  2. Remove chicken from saucepan and cool. Pull meat from the bone and shred. Combine shredded chicken and barbecue left in the saucepan.
  3. Stuff pita bread with barbecue chicken and grill on a heated sandwich press. Dress your Panini with mixed greens and sliced tomato!

*Toss the first four ingredients into a crock-pot for an even easier dinner! Cook 4 hours on high or 7 hours on low!
