Cheesecake Cookie Squares

Chocolate chips cookies are delicious on their own! In fact, I don’t know a single person who doesn’t love a fresh chocolate chip cookie. But if we’re being honest, they’re kinda over done and boring. SO…in an attempt to keep things fresh, I’ve created these sinful cheesecake cookie squares!


Cookie Dough

2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter – softened
1/4 cup vegetable oil
1 cup light brown sugar
1/2 cup sugar
1 egg
1 egg yolk
1 tablespoon vanilla extract
1/2 cup chocolate chip morsels

Cheesecake Layer

16 oz. cream cheese – softened (2 packages)
1/2 cup sugar
1 egg
1 egg white
1 teaspoon vanilla extract
the juice of one lemon


  1. Heat oven to 350F.  Spray an 8×8 baking dish with cooking spray, set aside.
  2. Whisk together flour, baking soda and salt. Set aside.
  3. In a large mixing bowl, cream together butter, oil and sugars until fluffy. Then incorporate egg, egg yolk and vanilla. Gradually beat in flour mixture until dough begins to form. Lastly, fold in chocolate chips. Divide cookie dough and press half into the bottom of prepare baking dish.
  4. In another mixing bowl, cream together all ingredients needed for cheesecake layer. Spread cream cheese mixture evenly atop cookie dough crust.
  5. Use the remaining cookie dough to cover the cheesecake layer. Crumble and lightly press.
  6. Bake 45-50 minutes. Cool 1 hour, then refrigerate 4 hours or overnight. Enjoy!

*Using a 13×9 baking dish? Bake 35-40 minutes!
