Pimento Grilled Cheese & Tomato Soup

Homemade pimento cheese is so simple and way more delicious than any store-bought alternative. Serve on yummy sandwiches or as a dip for crackers and vegetables.

Pimento Cheese


3/4 cup mayonnaise
7 oz jar diced pimento – drained
1 teaspoon grated onion
1/4 teaspoon black pepper
8 oz extra-sharp cheddar cheese – grated
4 oz monetary jack cheese – grated


  1. Combine first four ingredients, then stir in cheese.
  2. Cover and refrigerate for at least 4 hours. Enjoy!

There’s nothing better than a grilled cheese with a bowl of tomato soup.  Stuff a few dollops of this flavorful cheese between two slices of buttered bread, brown your sandwich on both sides and enjoy a gooey grilled cheese!

Making tomato soup doesn’t get easier than this! This rustic recipe requires about five minutes of your precious time.

Rustic Tomato Soup


1 can crushed tomatoes
2 cups water or broth
1 teaspoon minced garlic
1 teaspoon salt & pepper
1/4 cup whole milk


  1. In a saucepan combine crushed tomatoes, water, garlic and seasoning. Simmer about 10 minutes.
  2. Reduce heat and stir in milk. Remove from heat.
  3. Ladle into soup bowls. Garnish with chopped parsley and a dollop of sour cream. Enjoy!
