Double Chocolate Chip Cookies

I’m always craving chocolate! I usually need a sweet nibble after enjoying a savory meal, which is why I keep the pantry stocked with chocolate options. This weekend my wife requested a fresh batch of chocolate chip cookies and I thought I’d take it a step further and double the chocolate because there’s nothing better than a chocolate cookie packed with chocolate chips. I’ve created this recipe to satisfy the indulgent chocolate lover in all of us! I hope you enjoy!

1/2 cup butter (1 stick) – cold, cubed
1/2 cup sugar
1 egg
1/4 cup cocoa powder
1 cup flour
1/4 teaspoon baking powder
dash of salt
1 cup chocolate chips

  1. Heat oven to 350F. Line a baking sheet with parchment paper.
  2. Beat together butter and sugar until creamed and fluffy. Add egg and coco powder mix well.
  3. Incorporate flour, baking powder and salt. Batter will become very thick, so begin using your hands if needed.
  4. Fold in chocolate chips and drop round teaspoons of batter on prepare baking sheet. Press each dough ball flat.
  5. Bake 15 minutes. Cool on baking rack. Enjoy!

*Recipe yields two dozen cookies!
