Chocolate Chip Meringue Cookies

These cookies are so light, you could probably eat the whole batch! Only four ingredients between you and deliciousness!! What are you waiting for?


3 egg whites
1 teaspoon fresh lemon juice
1/2 cup sugar
1/2 cup chocolate chip morsels


  1. Heat oven to 300F. Line a large baking sheet with parchment paper.
  2. Using a stand mixer, whisk together egg whites and lemon juice until soft peaks form. Gradually add sugar, whisking until stiff peaks form and meringue is glossy. Fold in chocolate chips.
  3. Fill a pastry bag with meringue and pipe onto prepared baking sheet. (Trim the tip of a plastic bag instead, just be sure the hole is large enough for the chips to pass through.)
  4. Bake 25 minutes. Cool completely before enjoying!

*Make chocolate meringues by adding 1 tablespoon of cocoa powder to sugar!
