Rustic Rigatoni

This recipe–like every other–is extremely versatile! I’ve created a yummy pasta sauce using a can of crushed tomatoes and spicy Italian sausage. Now feel free to customize your dinner with the veggies and pasta you prefer!


1/2 pound uncooked rigatoni
1/2 pound ground Italian sausage
1 bell pepper – sliced
1 onion – chopped
1 (14.5 oz.) can crushed tomatoes
1 tablespoon garlic – minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 cup reserved pasta water
1 or 2 small cube(s) cream cheese – softened


  1. Bring a large pot of water to a rolling boil, salt water and cook pasta. Reserve one cup of pasta water.
  2. Meanwhile, cook sausage in a large skillet or sauce-pot. Once sausage has browned, add sliced bell pepper and chopped onion. Cook, stirring often. Add crushed tomatoes, garlic, oregano and basil, simmer until peppers are soft.
  3. Gradually stir-in 1/2 cup pasta water and cream cheese. Once cream cheese has been completely incorporated, add remaining 1/2 cup pasta water. Allow sauce to simmer and thicken, about 5 minutes more.
  4. Toss pasta and sauce together. Garnish with cheese and chopped green onion or parsley. Enjoy!
