Peanut Butter Brownie Bites

These chocolate brownie bites are perfect when topped with a creamy peanut butter frosting and even more delicious when you swirl that frosting into the batter! You decide what works best for you! Perhaps folding chocolate chips or chopped walnuts into your brownie batter would add a bit of flair. Ingredients

3 oz. chocolate – baking squares or chips
1/4 cup butter plus 2 tablespoons
3/4 cup sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup flour
1 teaspoon salt
1/4 cup peanut butter
2 tablespoons confectioner’s sugar

Directions

  1. Heat oven to 350F. Spray a miniature muffin pan with cooking spray.
  2. Using a double boiler, melt butter and chocolate. Remove from heat and add sugar.
  3. Gradually beat in eggs and vanilla. Then beat in flour and salt. Mix until batter is creamy, then drop by tablespoons into prepared muffin pan.
  4. Bake 15-18 minutes. Cool 5 minutes before removing from muffin pan.
  5. In a mixing bowl, cream together peanut butter, remaining butter and confectioner’s sugar until smooth. Top each cooled brownie bite with a dollop of frosting OR top each uncooked brownie with a teaspoon of frosting, swirl into batter and bake as directed! Your result will look something like this…
