Mac N’ Trees

The name says it all! This cheesy macaroni is super rich and creamy!

1 pound macaroni noodles
2 large broccoli crowns – cut into florets
1/4 cup butter
1 garlic clove – minced
1/4 cup flour
1/2 cup reserved pasta water
2 cups milk
2 1/2 cups sharp cheddar cheese – shredded
salt & pepper to taste

  1. Bring a pot of water to a boil for the pasta and broccoli. Season pasta water with salt and add macaroni. After 5 minutes, add prepared broccoli and cook about 7 minutes more. Drain pasta and broccoli, saving 1/2 cup of pasta water.
  2. In a large saucepan, melt butter then add garlic. Whisk in flour and cook for 1 minute, then whisk in reserved pasta water and milk. Season with salt & pepper and allow mixture to simmer and thicken.
  3. Stir in 2 cups of cheddar cheese. Once cheese has melted, fold in pasta and broccoli. Pour mixture into a baking dish and top with remaining 1/2 cup cheddar cheese.
  4. Broil until cheese is melted and bubbling.  Enjoy!
