5 Layer Ice Cream Cake

Happy St. Patricks Day! This tasty cake is the perfect treat!


1 box chocolate cake mix (and ingredients required)
1 box white cake mix ( and ingredients required)
2 quarts mint chocolate chip ice cream
2 cups heavy whipping cream
1 1/2 cups confectioner’s sugar


  1. Before assembling this cake, prepare two 8″ round chocolate cakes and one 8″ round white cake. Also, soften ice cream.
  2. Using two 8″ springform pans begin creating cake starting with one chocolate cake layer and 1 quart softened ice cream. Freeze. In the other sprinform pan, assemble a layer of white cake and the remaining softened ice cream. Freeze overnight or 4 hours.
  3. Meanwhile, beat whipping cream until soft peaks form. Add confectioner’s sugar and mix well. Refrigerate until ready to frost cake.
  4. To assemble cake, remove each prepared layer from springform pan. Top chocolate cake layer with white cake layer and then top the entire cake with remaining chocolate cake.
  5. Divide frosting and cover cake with a crumb coat. Freeze at least 1 hour.
  6. Finish cake with remaining frosting. Freeze.
  7. Thaw before serving. Enjoy!

*This cake requires only half the prepared white cake.
*Freeze cakes before assembling!
