Broccoli & Cheddar Soufflé

 Broccoli, onion and cheddar add a ton of flavor to this soufflé! It’s the perfect side-dish for a spring brunch and it’s delicious in the morning on biscuits with bacon.

Ingredients

1 tablespoon plus 1/4 cup unsalted butter
1 large broccoli crown – cut into small florets and rinsed
1 small onion – chopped
1/4 cup flour
1 1/4 cups milk
5 eggs – separated
1 cup grated cheddar cheese

Directions

  1. In a large skillet, combine tablespoon of butter, broccoli and onion. Cook, stirring often, until soft. Season with salt and pepper and set aside.
  2. Heat oven to 400F. Prepare a soufflé dish or a square baking dish with cooking spray or butter.
  3. In a saucepan over medium heat, melt 1/4 cup butter then whisk in flour. Once incorporated, gradually add milk and season with salt and pepper. Stir constantly until creamy, about 5 minutes.
  4. Transfer soufflé base to a large mixing bowl. Using an electric mixer, gradually incorporate egg yolks. Add broccoli and onion mixture, then cheddar cheese. Mix well.
  5. In another mixing bowl, beat eggs whites with a pinch of salt until soft peeks form. Fold whites into soufflé base.
  6. Bake 40 minutes. Soufflé should be puffed and golden.
